Spiced Rich Hot Chocolate

For a European experience in your home serve this rich and intense hot chocolate demitasse style topped with a miniature marshmallow.

Yield: 4-5 demitasse servings


6 oz (3 bars) Guittard 70% Cacao Bittersweet or 64 % Cacao Semisweet Chocolate broken into pieces

2 ¼ cups whole milk

1 ½ cups heavy whipping cream

¼ cup sugar

1/8 teaspoon ground cinnamon

1/8 teaspoon ground cardamom

¾ teaspoon vanilla extract

1/8 teaspoon salt


Combine ingredients in heavy 3 quart saucepan over medium-high heat whisking constantly until chocolate is melted. Use hand held wand blender or strainer to smooth out any specks. Serve immediately.
