Pinwheel Cookies

As a Latina, holidays are always the best part of the year for me. It's when we all sit together at the table, sharing cookies, pastries, and coffee, just talking for hours and playing board games in our PJs.   These cookies we called 'sables' are definitely some of my faves. I was always so excited to see what shape they were, and I'd always try to sneak a couple more after my parents told me that was enough. My brother and I always found a way to grab extra and hide them to share later, or I'd eat these cookies with coffee with my grandma while watching telenovelas. 

These cookies are always a part of my holidays, but now instead of buying them, I make them.

Ingredients

Vanilla sable 
285g butter
140g powder sugar
1 g salt
½ tsp vanilla paste 
1 whole egg
400g all-purpose flour 

Chocolate sable
285g butter
140g powder sugar 
1g salt
1 whole egg
325g all-purpose flour
75g Guittard Cocoa Rouge 

Directions

Vanilla Sable:
Cream butter, powder sugar , salt until smooth 
Then add egg and vanilla paste 
Sift flour and mix all at once until combine
Roll between parchment paper until ½ centimeter then chill  

Chocolate sable:
Cream butter, powder sugar , salt until smooth
Then add egg and vanilla paste
Sift flour and mix all at once until combine
Roll between parchment paper until ½ centimeter then chill  

Assemble: 
After chilling both doughs roll together to form a spiral
Make half rolling vanilla on the bottom
Then with the other half roll with chocolate on the bottom
Pre heat oven 300F
Bake 7/7 minutes
