Mosaic cake in Turkey is a recipe passed down from generation to generations. It is an easy dessert that has been prepared at home for centuries and used for celebrations or simply as a treat. The no-bake cake is a rich, chocolatey mixture combined with broken biscuits and candied fruit which create a mosaic-like pattern when sliced. At Dalida, we serve mosaic cake to celebrate our guests’ important life events and we have re-imagined it as a cookie that can be shared and gifted for the holiday season.
415g Butter (softened)
225g Sugar
215g Brown Sugar
135g Eggs (room temperature)
8g Vanilla Extract
450g AP Flour
50g Cocoa Powder
8g Baking Soda
10g Salt
150g 61% cacao Lever du Soleil 150g
150g Candied Lemon (Small Cubes)
150g Tea Cookies (Petit Beurre Style - preferably Ulker Brand, crushed large)
In a medium bowl mix flour, cocoa powder, baking soda, and salt. Set aside.
Using a paddle attachment, cream together softened butter and sugars until combined for about 2 mins. Slowly add in eggs and vanilla making sure to scrape well between additions. Mix in the dry ingredients until just combined.
Add in the crushed tea cookies, candied lemon cubes and chocolate chips and mix well until there are no dry patches of flour. Do not over mix as you run the risk of crushing the tea cookies too much and losing the mosaic effect.
Scoop/portion to desired size. Chill for 1 hour.
Bake at 350 for 10-12 mins depending on preferred cookie done-ness.
Optional - While still warm press in a piece of tea cookie .
