Chocolate Maple Fudge

This foolproof fudge is a rich, chocolatey delight.

1 1/2 cups + 1 1/2 tbsp [336g] granulated sugar

3 tbsp [24g] maple syrup

2/3 cup [158g] evaporated milk

½ tsp salt

1 ¾ heaping cup [305g] Guittard 100% Unsweetened Baking Chips

2 tbsp [26g] unsalted butter

3/4 cup [100g] toasted walnuts (optional)


Line 8" square baking pan with parchment paper. In a 3-quart saucepan, combine sugar, maple syrup and evaporated milk. Bring to a boil, without stirring, until mixture reaches 225°F. Remove from heat; add salt, butter, and 100% baking chips. Whisk until fully melted. Whisk vigorously for 30 seconds, let mixture rest for 30 seconds, then one more 30 second vigorous whisk. Stir in optional toasted walnuts. Pour mixture into prepared pan, spreading evenly and allow to set before serving. For best results, rest fudge for 6-8 hours and store in airtight container at room temperature.
