A small moist classic French cake with a rich nutty flavor with added cocoa notes.

Ingredients

CHOCOLATE FINANCIER

Powdered sugar                                     165g

Almond Flour                                          60g

All Purpose Flour                                   48g

Cocoa Rouge                                         20g

Baking Powder                                       1.5g

Invert Sugar                                            16g

Vanilla bean                                            1ea

Brown butter                                           95g

Egg Whites                                            165g

Dark Rum                                               10g

Directions

Method:

  • Mix all dry ingredients together with a whisk in a suitable bowl.
  • Brown butter with vanilla bean. Add invert sugar. Cool.
  • Mix butter into dry mix followed by egg whites and rum.
  • Bake in desired flexipan mol at 350F/175C
