Rich dark chocolate with a splash of coffee flavor.
2 dozen 3 inch cookies
2 cups [326g] Guittard Extra Dark chips
6 ½ tbsp [85g] unsalted butter
2 [100g] eggs
2 [40g] egg yolks
1 cup [180g] sugar
1-1/3 cups [185g] AP flour
¾ tsp baking soda
1 tsp vanilla extract
¼ cup [48g] water or brewed coffee
Melt butter and 2 cups [326g] chips. Whip eggs, yolks, sugar and vanilla for 5 minutes, until appearance is light and fluffy. Mix salt, soda and flour together in a separate bowl. Fold egg mixture into chocolate mixture followed by water or coffee. Scoop and bake at 325F about 9 minutes.
