46.5g 100% Unsweetened Oban
136g 58% cacao Vivre made with Stevia
75g Butter
81.25g Eggs
0.25g Freeze Dried Coffee
136.25g King Arthur Sweetener
70g Heavy Cream
3g Vanilla
22.5g King Arthur Flour Replacement
12.5g Almond flour
1.5g Kosher Salt
67.5g 58% cacao Vivre made with Stevia

Directions

Melt the Oban, 58% chocolate, and butter together, keep warm. Whisk the eggs and Sweetener together until light and pale. Add warm chocolate mixture, whisk well to combine.
Add cream, mix well. Add dry ingredients and 58% chips, mix fully to incorporate.

Pour mix out onto a shallow pan. Refrigerate until firm enough to scoop.

Bake @ 350°F for 12-14 minutes, cookie will start to crack and feel semi firm to touch.
