About This Course 

A chocolate course focused on the nutritive, functional and DELICIOUS benefits of everyone’s favorite ingredient!

Pure, 100% chocolate is decadent, yes, but it is also loaded with over 300 potent biochemicals and antioxidants that host a plethora of health benefits. In Ayurvedic medicine, it’s known to stimulate kapha and a sense of grounding and calm, vital for our mental and emotional balance. (This is less so for chocolates with added milk or sugar.)

In this course, we’ll focus on dark and unsweetened chocolates (70% and higher, cocoa powder + nibs) discussing the basic health benefits of consuming chocolate, learning to use chocolate as an ingredient for optimal health, woven into a balanced diet.  We’ll discuss the nutritional elements of these compounds, how we can incorporate other healing ingredients into chocolate, as well as difference in chocolate products and how to choose one.

We’ll also work on several recipes using chocolate products that fit this healthy, delicious bill and the techniques for how to use these chocolates best. Some recipe ideas:

Chocolate Crispy Bars w/Coconut + Raspberry + Hemp for Jersey Pockets + Backpacks

Homemade Dark Chocolate Bark (with ingredients for immunity, radiance, endurance)

Deep Dark Drinking Chocolate (for Hot + Cold Days)

Chocolate + Reishi Zoom Balls

Adaptogenic Bon Bons (ex: Maca, Cardamom + Almond Butter/ Coconut + Rose Petals + Pistachio/ Matcha + Sesame Butter etc)

Cacao Granola w/Nibs + Cashews

The class will conclude with a guided LA hike, led by Lentine herself. All attendees will be gifted a Topo Designs pack to take on the hike, which will include Ursa Major skin essentials, a water bottle and of course the healthy chocolate bites crafted in class. 

About Lentine

Before becoming a professional chef, Lentine Alexis traveled the globe as a professional endurance athlete. Training, and competing in some of the world's most gruelling events, her career was made golden less by her athletic accomplishments and more by shaping her philosophy that we all need a healthy diet of rich experiences, adventure and the highest quality food ingredients to fuel our best selves and peak performances. Having spent time as a pastry chef in the Michelin-starred kitchens of Los Angeles, Lentine now resides in her hometown of Boulder, Colorado where she acts as the culinary director chef at Cured Boulder. She also consults in the sport, outdoor and wellness industries, crafting experiences and recipes for her personal clients in the sport and outdoor industry to include UnderArmour, Specialized Bicycles, Rapha Racing, SRAM, Backcountry.com and more. It's not uncommon to find her perusing the farmer’s market early in the morning so she can spend the rest of the day riding her bike or hiking in the high country, spinning her mental wheels and coming up with new recipes for her first cookbook - a guide to flavorful fuel for athletes + everyone - to be released in August of 2021.
